Look how easy this lamb marinade is. Try and use fresh, Ontario garlic if possible.

Ingredients
  1. 2 cloves of garlic minced
  2. 1 sprig on fresh rosemary minced
  3. 1 sprig of fresh thyme minced
  4. 1 tsp salt
  5. 1 tsp pepper
  6. 3 tablespoons olive oil
Instructions
  1. Mix together and rub all over lamb. Marinate for as long as possible.

Ingredients
  1. 3 tablespoon Dijon mustard
  2. 2 tablespoon Vegetable oil
  3. 1 tablespoon Soya Sauce
  4. 1/4 cup water, wine or dry sherry
  5. 2 cloves of garlic, minced
  6. 1 teaspoon freshly ground black pepper
Instructions
  1. Mix all ingredients together and marinate meat or poultry for 1 hour or more (the longer the better).
  2. This marinade is particularly good on lamb and pork.
  3. I would suggest an addition of fresh rosemary.

Everyday Vinaigrette

Ingredients
  1. 3/4 cup olive oil
  2. 1/4 cup vinegar
  3. 1 teaspoon Dijon mustard
  4. 1 teaspoon salt
Instructions
  1. Mix the vinegar with the salt until salt has dissolved.
  2. Mix in mustard and whisk in the olive oil.
Notes
  1. When I was growing up, my Mother always made her own salad dressing. One dressing, no variation. Back then, I wanted the bottled stuff, you remember-French, Italian, Thousand Islands. Nope, we always had the vinaigrette. Out on my own and trying recipes I found a french vinaigrette that I fell in love with and has been my staple dressing in the fridge for well.... a very long time. When I checked my mother's recipe it was almost identical-funny how things work out!
  2. *Note: This is a very versatile dressing. You can add Pepper, garlic, herbs-The dressing will not keep as long though if you do. I vary the vinegar all the time. My favourite vinegar is sherry vinegar, you can use any vinegar you choose. My mother used cider vinegar

  1. 1 1/2 teaspoons of paprika
  2. 3/4 teaspoon pepper
  3. 1/2 teaspoon each salt, dried oregano,chili powder and dry mustard
  4. 1/4 teaspoon dried thyme
  5. Pinch of cayenne
Instructions
  1. Mix together and sprinkle on fish prior to grilling-Keep this mixture in a spice jar so you are ready to use in a flash!
  2. *Note: When I grill my fish. I first lightly brush both sides of fish with oil
