- 3/4 cup olive oil
- 1/4 cup vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- Mix the vinegar with the salt until salt has dissolved.
- Mix in mustard and whisk in the olive oil.
- When I was growing up, my Mother always made her own salad dressing. One dressing, no variation. Back then, I wanted the bottled stuff, you remember-French, Italian, Thousand Islands. Nope, we always had the vinaigrette. Out on my own and trying recipes I found a french vinaigrette that I fell in love with and has been my staple dressing in the fridge for well.... a very long time. When I checked my mother's recipe it was almost identical-funny how things work out!
- *Note: This is a very versatile dressing. You can add Pepper, garlic, herbs-The dressing will not keep as long though if you do. I vary the vinegar all the time. My favourite vinegar is sherry vinegar, you can use any vinegar you choose. My mother used cider vinegar
